Course 1: Raw Scallop Carpaccio, Black Truffle Vinaigrette, Radicchio, Lardo di Colonnata Or Radicchio Salad, Endive, Black Truffle Vinaigrette, Blue Cheese 

Course 2: Lobster Bisque, Creme Fraiche, Tarragon Or Winter Vegetable Bisque 

Course 3: Sea Bass, Champagne Beurre Blanc, Roasted Cabbage, Chive Oil Or Braised Short Ribs Burgundy Style, Carrots, Parsley, Or Mushroom Vol Au Vent
